Ingredients
  

  • 2 lbs beef chuck cut into 1-inch cubes
  • 2 lbs Yukon Gold potatoes peeled and cubed
  • 1 large onion chopped
  • 8 cloves garlic minced
  • ¼ cup olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup unsalted butter
  • ¼ cup beef broth
  • 2 tbsp fresh parsley chopped
  • 1 tbsp cornstarch
  • 2 tbsp cold water

Method
 

  1. Sear beef cubes in olive oil in batches, 2-3 minutes per side. Set aside.
  2. In the same skillet, cook onion until softened, then add half the garlic and sauté 1 minute.
  3. Transfer beef, onion mixture, and potatoes to crockpot. Season with Italian seasoning, paprika, salt, and pepper.
  4. In a saucepan, melt butter and add remaining garlic. Cook 1 minute, then stir in beef broth. Simmer gently.
  5. Mix cornstarch with cold water and whisk into butter mixture until thickened.
  6. Pour garlic butter sauce over beef and potatoes. Cover and cook on LOW 6-8 hours or HIGH 3-4 hours until beef is tender.
  7. Stir in parsley, adjust seasoning, and serve hot.

Serves 6. For best results, use fresh garlic, sear beef in batches, and cut potatoes into 1-inch cubes to prevent mushiness. Freezer-friendly for up to 3 months.
