- Sear beef cubes in olive oil in batches, 2-3 minutes per side. Set aside.
- In the same skillet, cook onion until softened, then add half the garlic and sauté 1 minute.
- Transfer beef, onion mixture, and potatoes to crockpot. Season with Italian seasoning, paprika, salt, and pepper.
- In a saucepan, melt butter and add remaining garlic. Cook 1 minute, then stir in beef broth. Simmer gently.
- Mix cornstarch with cold water and whisk into butter mixture until thickened.
- Pour garlic butter sauce over beef and potatoes. Cover and cook on LOW 6-8 hours or HIGH 3-4 hours until beef is tender.
- Stir in parsley, adjust seasoning, and serve hot.
Notes
Serves 6. For best results, use fresh garlic, sear beef in batches, and cut potatoes into 1-inch cubes to prevent mushiness. Freezer-friendly for up to 3 months.
