Ingredients
  

  • 4 medium sweet potatoes 2-3 pounds, peeled and cubed
  • 1/4 cup unsalted butter melted
  • 1/4 cup pure honey
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon grated nutmeg
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly cracked black pepper
  • Optional: fresh thyme leaves chopped chives, or flaky sea salt for garnish

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Peel and cube sweet potatoes into 1-inch pieces. Toss with olive oil in a large mixing bowl.
  3. Whisk together melted butter, honey, cinnamon, nutmeg, salt, and pepper in a separate bowl.
  4. Pour honey butter mixture over sweet potatoes and toss until evenly coated.
  5. Arrange in a single layer on the prepared baking sheet without overcrowding.
  6. Roast 25-30 minutes, flipping halfway through, until golden brown and fork-tender.
  7. Remove from oven and garnish with fresh thyme or sea salt if desired. Serve hot.

Notes

Do not overcrowd the baking sheet to ensure crispiness. For dairy-free, substitute coconut oil or vegan butter. Use maple syrup instead of honey for variation.
