Creamy Sausage Tortellini Soup

Ingredients
  

  • 12 oz spicy Italian sausage or turkey sausage
  • 1 tbsp extra-virgin olive oil
  • 6 cups water
  • 1 tbsp Italian seasoning
  • 1 tsp paprika regular or smoked
  • 5 cloves garlic minced (or 2 tsp garlic powder)
  • 1/4 tsp red pepper flakes optional
  • 1 tbsp tomato paste
  • 1 large sweet potato peeled and cubed (about 2 cups)
  • 8 oz refrigerated three-cheese tortellini
  • 4 oz fresh baby spinach or kale/chard
  • 1/2 cup heavy cream or half-and-half
  • 4 tbsp fresh thyme leaves or 2 tsp dried thyme

Method
 

  1. Heat olive oil in a large pot. Add sausage, cook 6-8 minutes until browned. Drain excess grease, leaving 1 tbsp.
  2. Stir in Italian seasoning and paprika, cooking 1 minute to bloom flavors.
  3. Add sweet potato, garlic, red pepper flakes, and tomato paste. Cook 2-3 minutes until fragrant.
  4. Pour in water, scraping bottom to release fond. Bring to boil, then simmer 15 minutes until potatoes are tender.
  5. Add tortellini. Cover and cook 10 minutes until tender.
  6. Stir in spinach and cook until wilted, 30-60 seconds.
  7. Remove from heat. Stir in heavy cream until smooth and creamy.
  8. Adjust seasoning with salt and pepper. Garnish with fresh thyme.

Notes

Cook tortellini just until tender to prevent mushiness. Always add cream off heat to avoid curdling. Brown sausage thoroughly for the best flavor.
