Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground beef or ground turkey/Italian sausage
  • 1 small onion finely chopped
  • 3 garlic cloves minced
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon red pepper flakes optional
  • 1 24-ounce jar marinara or pasta sauce
  • 4 cups beef broth or chicken/vegetable broth
  • 2 cups water
  • 8 ounces lasagna noodles broken into bite-sized pieces
  • 1 cup fresh spinach optional
  • 1 cup ricotta cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Method
 

  1. Heat olive oil in a large pot. Brown ground beef until fully cooked, then add onion and garlic. Cook 3-4 minutes until fragrant.
  2. Stir in Italian seasoning and red pepper flakes, then add marinara sauce, beef broth, and water. Bring to a simmer.
  3. Add broken lasagna noodles and cook 10-12 minutes until tender. Stir in spinach and cook 2 minutes.
  4. Reduce heat to low. Stir in ricotta and mozzarella until creamy, then add Parmesan. Season with salt and pepper.
  5. Serve hot, garnished with extra ricotta and fresh basil.

Notes

Add pasta only when broth is simmering to avoid mushy texture. Reduce heat before adding cheeses to prevent separation.
