Ingredients
  

  • 240 g cottage cheese blended until smooth
  • 1 large egg
  • 60 ml honey or maple syrup
  • 5 tsp vanilla extract
  • 120 g oat flour gluten free if needed
  • 60 g vanilla or unflavored protein powder
  • 5 tsp baking powder
  • 1.5 tsp salt
  • 40 g mini dark chocolate chips or raisins

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend cottage cheese until smooth.
  3. In a bowl, whisk blended cottage cheese, egg, honey, and vanilla.
  4. Stir in oat flour, protein powder, baking powder, and salt until combined.
  5. Fold in chocolate chips or raisins.
  6. Scoop dough onto baking sheet and gently flatten each cookie.
  7. Bake for 10–12 minutes, until set and lightly golden on the edges.
  8. Cool before serving.

These cookies are best enjoyed fresh. You can store them in an airtight container for a few days, or freeze them for longer storage.
