- Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan or line it with parchment paper for easier removal.
- In a medium bowl, combine the cottage cheese, honey (or maple syrup), coconut oil (or melted butter), eggs, and vanilla extract. Using a hand mixer or blender, blend until smooth and creamy.
- In a separate large bowl, whisk together the cocoa powder, almond flour (or oat flour), baking powder, and salt until evenly combined.
- Pour the wet mixture into the dry ingredients. Stir until just combined, being careful not to overmix.
- If you are using chocolate chips, fold them into the batter at this point for added chocolatey goodness.
- Pour the brownie batter into the prepared baking pan and spread it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until the brownies have set and a toothpick inserted into the center comes out with a few moist crumbs.
- Allow the brownies to cool in the pan for at least 10 minutes before removing and cutting into squares.
Notes
These brownies are great served warm or cooled. You can also add nuts or dried fruits for extra texture!
