Ingredients
  

  • cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 4 teaspoons baking powder
  • ½ teaspoon fine sea salt
  • 1⅓ cups buttermilk
  • 1 large egg well beaten
  • 4 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract
  • 12 cooked breakfast sausage links

Method
 

  1. Cook breakfast sausage links until golden brown and set aside to drain on paper towels.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk buttermilk, egg, melted butter, and vanilla until smooth.
  4. Combine wet and dry ingredients, stir gently until just combined, and let rest 5 minutes.
  5. Heat a non-stick skillet over medium heat and lightly spray with cooking spray.
  6. Scoop 3 tablespoons of batter into skillet and spread into a round pancake.
  7. Cook 2-3 minutes until bubbles form, then flip and cook 2-3 more minutes.
  8. Place a hot pancake on a plate, roll a cooked sausage link inside while warm, seam-side down.
  9. Repeat with remaining batter and sausages. Keep warm if needed and serve immediately.

Notes

For healthier options, use whole wheat or almond flour, turkey or chicken sausages, plant-based alternatives, or dairy-free substitutes. Serve with maple syrup, fresh fruit, or flavored syrups for variety.
