Ingredients
  

  • cup long-grain white rice uncooked
  • 1 lb ground beef 80–90% lean
  • 1 yellow onion diced
  • 3 jalapeños diced and de-seeded
  • 1 16 oz can refried beans
  • 2 cups shredded cheddar cheese
  • 6 large flour tortillas 10-inch
  • 3 –4 cups red enchilada sauce

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cook rice in 1⅓ cups water until fluffy, then set aside.
  3. Brown ground beef in a large skillet over medium-high heat.
  4. Add diced onion and jalapeños and cook until softened.
  5. Stir in ½ cup enchilada sauce and remove from heat.
  6. Spread ¼ cup enchilada sauce in a 9x13-inch baking dish.
  7. Spread refried beans down the center of each tortilla.
  8. Add rice, beef mixture, and shredded cheese.
  9. Roll tortillas tightly and place seam-side down in dish.
  10. Pour remaining enchilada sauce over burritos.
  11. Top with remaining cheese.
  12. Bake for 25–30 minutes until hot and bubbly.

Notes

Do not overfill tortillas to prevent bursting. Use room-temperature enchilada sauce for even baking and best texture.
