Method
- Preheat oven to 375°F (190°C).
- Cook rice in 1⅓ cups water until fluffy, then set aside.
- Brown ground beef in a large skillet over medium-high heat.
- Add diced onion and jalapeños and cook until softened.
- Stir in ½ cup enchilada sauce and remove from heat.
- Spread ¼ cup enchilada sauce in a 9x13-inch baking dish.
- Spread refried beans down the center of each tortilla.
- Add rice, beef mixture, and shredded cheese.
- Roll tortillas tightly and place seam-side down in dish.
- Pour remaining enchilada sauce over burritos.
- Top with remaining cheese.
- Bake for 25–30 minutes until hot and bubbly.
Notes
Do not overfill tortillas to prevent bursting. Use room-temperature enchilada sauce for even baking and best texture.
