Ingredients

  • 6 –8 very ripe bananas sliced
  • ½ cup granulated sugar
  • ¼ cup light brown sugar
  • ¼ cup unsalted butter melted
  • ¼ cup water
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • ¾ tsp cinnamon
  • ¼ tsp nutmeg
  • Pinch of salt
  • cups all-purpose flour
  • 1 cup granulated sugar
  • tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup buttermilk
  • ½ cup unsalted butter melted
  • 1 tsp vanilla extract
  • 2 –3 tbsp turbinado or demerara sugar

Method

  1. In a large bowl, gently toss sliced bananas with granulated sugar, brown sugar, melted butter, water, lemon juice, vanilla, cinnamon, nutmeg, and salt.
  2. Let mixture sit for 15–20 minutes to create a syrup.
  3. Preheat oven to 375°F.
  4. In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
  5. In another bowl, whisk buttermilk, melted butter, and vanilla.
  6. Combine wet and dry ingredients until just mixed.
  7. Pour banana mixture into a 9×13 baking dish.
  8. Gently spoon batter over bananas without mixing.
  9. Sprinkle turbinado sugar over the top.
  10. Bake for 40–45 minutes until golden and bubbling.
  11. Cool for 15–20 minutes before serving.

Notes

Use very ripe bananas for best flavor and texture. Do not mix the topping into the filling. Sprinkle sugar on top for a crackly crust. Serve warm for best results.
