Ingredients
  

  • 4 lbs red potatoes cleaned and cut into chunks
  • 1/2 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 tablespoons minced garlic
  • 1/4 cup butter melted
  • 2/3 cup sour cream
  • 1/2 cup heavy cream warmed
  • 1/2 cup whole milk warmed
  • Fresh chives for garnish

Method
 

  1. Spray a 6 to 7 quart slow cooker with nonstick spray.
  2. Add potato chunks and pour water evenly over the top.
  3. Season with salt and black pepper.
  4. Add minced garlic and drizzle melted butter over potatoes.
  5. Cover and cook on high for 4 to 4.5 hours until fork tender.
  6. Without draining, mash potatoes directly in the slow cooker.
  7. Add sour cream and heavy cream and mash until combined.
  8. Use a hand mixer and slowly add milk until desired consistency is reached.
  9. Taste and adjust seasoning as needed.
  10. Serve warm topped with chives and additional butter if desired.

Notes

Do not drain the cooking liquid, as it contains starch that helps create a creamy texture. Warm dairy ingredients before adding to prevent lumps.
