  • 1 cup unsalted butter room temperature
  • 2 cups sugar
  • 2 eggs

Method
 

  1. Whisk together flour, baking powder, cream of tartar, and salt.
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs, lemon extract, Meyer lemon juice, and zest; beat until combined.
  4. Gradually add dry ingredients and mix until just combined. Chill dough for at least 1 hour.
  5. Preheat oven to 350°F (175°C) and line baking sheet with parchment paper.
  6. Scoop dough balls (1–2 tablespoons each) and place 2 inches apart. Bake 12–15 minutes until edges are golden.
  7. Cool 5 minutes on sheet, then transfer to a wire rack. Dust with powdered sugar if desired.
