Ingredients
  

  • 1/2 cup butter room temperature
  • 1/2 cup butter-flavored shortening
  • 1 cup powdered sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • Pink food coloring
  • Pink sprinkles

Method
 

  1. In a large bowl, beat butter, shortening, powdered sugar, egg, and vanilla until creamy.
  2. Add flour and salt and mix until a smooth dough forms.
  3. Divide dough into two equal portions.
  4. Leave one portion plain and tint the other with pink food coloring.
  5. Roll each dough portion into a 1/4-inch thick rectangle of equal size.
  6. Place one rectangle on top of the other and roll tightly into a log.
  7. Roll the dough log in pink sprinkles to coat evenly.
  8. Wrap and refrigerate for at least 3 hours or overnight.
  9. Preheat oven to 350°F (175°C).
  10. Slice dough into 1/4-inch cookies and place on a lined baking sheet.
  11. Bake for 11 minutes until edges are lightly golden.

Chilling the dough is essential to keep the cookie shape and defined swirls. Do not overbake to maintain a soft texture.
