- Preheat the oven to 400°F (220°C).
- Cut baguette slices into heart shapes using a cookie cutter.
- Brush both sides of the bread with 1 tablespoon olive oil.
- Place on a baking sheet and bake for 10 minutes until golden and crisp.
- Spread goat cheese evenly over the warm toasted bread.
- In a bowl, mix tomatoes, garlic, basil, balsamic vinegar, remaining olive oil, salt, and pepper.
- Spoon the tomato mixture over the goat cheese.
- Top with freshly grated Parmesan cheese.
- Serve immediately.
Notes
Use ripe tomatoes for the best flavor and add toppings just before serving to keep the bruschetta crisp.
