Method
- Pour the cold water into a saucepan and evenly sprinkle the gelatin over the top.
- Let the gelatin bloom for 5 minutes.
- Brew the green tea strong and measure 1/2 cup.
- Add the green tea, ginger juice, and lemon juice to the bloomed gelatin.
- Heat gently on low, stirring constantly, until the gelatin is fully dissolved.
- Sweeten with honey to taste and stir well.
- Pour the mixture into silicone molds or a lightly greased dish.
- Refrigerate for at least 2 hours until fully set.
- Remove from molds or cut into small squares and serve.
Notes
Do not boil the mixture to preserve nutrients. Adjust ginger and honey levels based on taste preference.
