Method
- Line a baking sheet with parchment paper.
- In a mixing bowl, combine Greek yogurt and peanut butter until smooth.
- Stir in maple syrup and vanilla extract until fully combined.
- Scoop tablespoon-sized portions onto the prepared baking sheet.
- Freeze for 1–2 hours until firm.
- If using chocolate, melt chocolate chips with coconut oil until smooth.
- Dip frozen bites into melted chocolate and return to baking sheet.
- Freeze an additional 30–60 minutes until set.
- Transfer bites to an airtight container and store in the freezer.
