Ingredients
  

  • 1 can 15 oz chickpeas, drained and rinsed
  • 1/2 cup shredded carrots
  • 1/2 cup diced red bell pepper
  • 1/4 cup thinly sliced red cabbage
  • 2 tablespoons chopped green onions
  • 2 tablespoons tahini
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon sesame oil
  • 1 clove garlic minced
  • 1 tablespoon chopped peanuts
  • 1 tablespoon fresh cilantro chopped
  • 1/2 teaspoon sesame seeds

Method
 

  1. Drain and rinse chickpeas thoroughly and pat dry.
  2. In a large bowl, combine chickpeas, carrots, red bell pepper, and red cabbage.
  3. In a small bowl, whisk together tahini, soy sauce, lime juice, honey, garlic, red pepper flakes, and sesame oil until smooth.
  4. Pour dressing over the salad ingredients and gently toss to coat evenly.
  5. Fold in green onions and fresh cilantro.
  6. Garnish with chopped peanuts and sesame seeds before serving.
