- Preheat Oven: Preheat oven to 425°F (220°C) and grease a mini muffin pan generously with butter or cooking spray.
- Mix Ingredients: In a large mixing bowl, combine Bisquick, sugar, buttermilk, vanilla, and cheddar cheese. Stir gently until just combined; do not overmix.
- Portion the Batter: Scoop batter into mini muffin cups, filling each about three-quarters full. You should get around 24 biscuits.
- Bake: Bake for 12–15 minutes until golden brown and puffed. Rotate pan halfway through for even browning.
- Cool & Serve: Let cool for 2–3 minutes in the pan, then transfer to a cooling rack. Serve warm with butter or honey.
Notes
