- Cut the tops off the strawberries and carefully hollow out the centers using a small knife or melon baller.
- In a bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth and fluffy.
- Transfer the cheesecake mixture to a piping bag or zip-top bag with the corner snipped.
- Pipe the filling evenly into each prepared strawberry.
- Sprinkle graham cracker crumbs over the tops of the filled strawberries.
- Chill for 30 minutes before serving, if desired.
