Ingredients

  • 6 medium crisp apples Granny Smith or Honeycrisp
  • 6 wooden sticks or skewers
  • 1 cup packed brown sugar
  • 1/2 cup light corn syrup
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • 1/4 teaspoon salt

Method

  1. Wash and completely dry the apples, then remove stems and insert wooden sticks.
  2. Line a baking sheet with parchment paper.
  3. In a heavy saucepan, combine brown sugar, corn syrup, butter, heavy cream, and salt.
  4. Cook over medium heat, stirring constantly, until smooth and thickened, about 8–10 minutes.
  5. Remove caramel from heat and allow to cool slightly.
  6. Dip each apple into the caramel, turning to coat evenly.
  7. Allow excess caramel to drip off, then place apples on parchment paper.
  8. Let caramel apples set for about 20 minutes before serving.

Notes

Make sure apples are completely dry before dipping so the caramel adheres properly. Tart apples work best to balance the sweetness.
