Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp vegetable oil
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/4 cup low-sodium soy sauce
  • 1 can 20 oz pineapple slices, drained
  • 1 tbsp cornstarch
  • 2 tbsp cold water
  • Sliced green onions
  • Sesame seeds

Method
 

  1. Preheat oven to 375°F and position rack in center.
  2. Pat chicken dry and season with garlic powder, onion powder, salt, and pepper.
  3. Heat oil in oven-safe skillet and sear chicken 3–4 minutes per side.
  4. Whisk pineapple juice, brown sugar, and soy sauce until sugar dissolves.
  5. Pour glaze over chicken.
  6. Add pineapple slices over and around chicken.
  7. Bake 25–30 minutes until chicken reaches 165°F.
  8. Transfer chicken to platter to rest.
  9. Whisk cornstarch and water, add to skillet, and simmer 2–3 minutes until thickened.
  10. Pour sauce over chicken and garnish with green onions and sesame seeds.

Notes

Use an oven-safe skillet large enough for good searing. Always dissolve brown sugar fully before cooking for a smooth glaze.
