Ingredients
  

  • 8 oz rotini or penne pasta
  • 2 ripe avocados
  • ½ cup cherry tomatoes halved
  • ¼ cup red onion thinly sliced
  • ¼ cup fresh cilantro chopped
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Method
 

  1. Cook pasta in well-salted water according to package directions until al dente.
  2. Rinse pasta under cold water and drain completely.
  3. Mash avocados in a large bowl until smooth with slight texture.
  4. Whisk lime juice, olive oil, salt, and black pepper into the avocado.
  5. Add cooled pasta, cherry tomatoes, red onion, and cilantro.
  6. Gently toss until evenly coated.
  7. Chill for 10–30 minutes before serving if desired.

Notes

For best flavor, use ripe avocados and completely cooled pasta. Add extra lime juice if the dressing thickens before serving.
