Ingredients
  

  • 6 cups cubed day-old bread approximately 300g
  • 2 medium apples peeled and diced (approximately 300g)
  • 1/2 cup granulated sugar 100g
  • 1/4 cup brown sugar 50g
  • 1 teaspoon ground cinnamon 5g
  • 1/4 teaspoon ground nutmeg 1g
  • 2 cups whole milk 480ml
  • 3 large eggs approximately 150g
  • 1 teaspoon vanilla extract 5ml
  • 1/4 cup unsalted butter melted (56g)
  • Optional Glaze: 1/2 cup powdered sugar 60g, 1–2 tablespoons milk (15–30ml), 1/4 teaspoon vanilla extract (1ml)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter or cooking spray.
  2. Combine cubed bread and diced apples in a large mixing bowl.
  3. In a separate bowl, whisk together granulated sugar, brown sugar, cinnamon, nutmeg, milk, eggs, vanilla, and melted butter until smooth.
  4. Pour the custard mixture over the bread and apples, stir gently to coat, and let rest 10 minutes.
  5. Transfer mixture to the prepared baking dish and bake 45–50 minutes until golden brown and set in the center.
  6. Prepare optional glaze by whisking powdered sugar, milk, and vanilla until smooth. Drizzle over warm bread pudding.
  7. Cool 10–15 minutes before serving for best texture.

Notes

Use firm apple varieties like Granny Smith or Honeycrisp for the best texture. Always use day-old or lightly toasted bread for proper custard absorption. Avoid overbaking to maintain a soft, custardy interior.
