Ingredients
  

  • 1 lb fresh salmon skinless and cut into bite-sized cubes
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or cooking spray
  • 1/2 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp honey
  • Juice of 1/2 lime
  • 2 cups cooked jasmine rice
  • 1 cup shredded purple cabbage
  • 1 avocado sliced
  • 1/2 cup shredded carrots
  • 2 green onions sliced
  • Fresh cilantro and sesame seeds for garnish

Method
 

  1. Preheat oven to 400°F (200°C) or air fryer to 390°F (200°C). Line baking tray with parchment if using oven.
  2. Toss salmon cubes with garlic powder, smoked paprika, salt, and pepper.
  3. Press each cube into panko breadcrumbs for coating. Spray lightly with olive oil.
  4. Bake 12-14 minutes (oven) or air fry 8-10 minutes, flipping halfway, until golden and salmon reaches 145°F.
  5. Whisk mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth to make bang bang sauce.
  6. Assemble bowls with rice base, cabbage, avocado, carrots, and salmon bites. Drizzle sauce generously.
  7. Top with green onions, cilantro, and sesame seeds before serving.

Notes

For lower carb, serve over cauliflower rice. For gluten-free, substitute panko with crushed gluten-free crackers or almond flour. Adjust sriracha to control spice level. Perfect for meal prep — store components separately and assemble fresh bowls during the week.
