Ingredients
  

  • 2 salmon fillets about 6 oz each
  • Salt and black pepper to taste
  • 300 g frozen spinach thawed and well drained
  • 1 medium onion thinly sliced
  • 2 cloves garlic minced
  • 200 g sour cream
  • 150 g fresh mozzarella cheese sliced or shredded
  • 1 tablespoon extra virgin olive oil

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced onion and sauté until translucent.
  3. Add minced garlic and cook briefly until fragrant.
  4. Add drained spinach and cook until heated through and moisture evaporates.
  5. Season with salt and pepper, remove from heat, and stir in sour cream until creamy.
  6. Preheat oven to 175°C (347°F).
  7. Season salmon fillets with salt and pepper on both sides.
  8. Sear salmon briefly in a hot pan for about 2 minutes per side.
  9. Place salmon fillets skin-side down in a greased baking dish.
  10. Spread the spinach mixture evenly over each fillet.
  11. Top generously with mozzarella cheese.
  12. Bake for 15 to 20 minutes until salmon flakes easily and cheese is melted and golden.
  13. Let rest for a few minutes before serving.

Notes

For a lighter version, replace sour cream with Greek yogurt or use part-skim mozzarella.
