Ingredients
  

  • 1 medium head green cabbage roughly chopped
  • 1 lb ground beef 80% lean
  • 2 medium carrots thinly sliced
  • 1 large onion diced
  • 3 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 4 cups beef broth
  • 1 tablespoon smoked paprika
  • 1 teaspoon black pepper
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 1 –2 bay leaves
  • 1 teaspoon olive oil

Method
 

  1. Heat oil in a large pot over medium-high heat.
  2. Add ground beef and brown for 6–8 minutes, breaking it apart.
  3. Drain excess fat, leaving a light coating in the pot.
  4. Add onion and garlic and sauté for 4–5 minutes until fragrant.
  5. Stir in smoked paprika and black pepper and cook for 1 minute.
  6. Add cabbage and carrots and cook for 5 minutes, stirring.
  7. Pour in beef broth and diced tomatoes with juices.
  8. Add apple cider vinegar, salt, and bay leaves.
  9. Bring to a boil, then reduce heat and simmer covered for 50 minutes.
  10. Remove bay leaves and adjust seasoning before serving.

Notes

Avoid overcooking cabbage to prevent strong odors. Always add an acid like vinegar or lemon juice to balance flavors and reduce bitterness.
