Method
- Spread refried beans evenly into the bottom of a serving dish.
- In a bowl, mash avocados with garlic paste, lime juice, half of the red onion, salt, and jalapeño if using.
- Spread the guacamole evenly over the bean layer.
- Using a mixer, blend sour cream, cream cheese, and taco seasoning until smooth.
- Spread the sour cream mixture evenly over the guacamole.
- Layer salsa evenly over the sour cream.
- Sprinkle shredded Mexican-blend cheese evenly on top.
- In a small bowl, mix tomatoes, remaining red onion, cilantro, and a pinch of salt.
- Scatter the fresh topping mixture over the cheese.
- Finish with sliced black olives.
- Cover and chill for at least 30 minutes before serving, if desired.
- Serve with tortilla chips.
Notes
For best results, drain salsa well and fully cover the guacamole layer with sour cream to prevent browning.
