Ingredients
  

  • 1 16-ounce can refried beans
  • 2 large cloves garlic minced
  • 1 teaspoon kosher salt
  • 4 medium avocados
  • 1/4 cup freshly squeezed lime juice
  • 1/2 cup finely chopped red onion divided
  • 2 tablespoons finely chopped jalapeño optional
  • 16 ounces sour cream
  • 4 ounces cream cheese softened
  • 1 1-ounce packet reduced-sodium taco seasoning
  • 2 cups salsa drained if watery
  • 2 cups shredded Mexican-blend cheese
  • 2 Roma tomatoes diced
  • 1 tablespoon fresh cilantro chopped
  • 1 2.25-ounce can sliced black olives, drained
  • Tortilla chips for serving

Method
 

  1. Spread refried beans evenly into the bottom of a serving dish.
  2. In a bowl, mash avocados with garlic paste, lime juice, half of the red onion, salt, and jalapeño if using.
  3. Spread the guacamole evenly over the bean layer.
  4. Using a mixer, blend sour cream, cream cheese, and taco seasoning until smooth.
  5. Spread the sour cream mixture evenly over the guacamole.
  6. Layer salsa evenly over the sour cream.
  7. Sprinkle shredded Mexican-blend cheese evenly on top.
  8. In a small bowl, mix tomatoes, remaining red onion, cilantro, and a pinch of salt.
  9. Scatter the fresh topping mixture over the cheese.
  10. Finish with sliced black olives.
  11. Cover and chill for at least 30 minutes before serving, if desired.
  12. Serve with tortilla chips.

Notes

For best results, drain salsa well and fully cover the guacamole layer with sour cream to prevent browning.
