Ingredients
  

  • 2 cups shredded cooked chicken rotisserie works best
  • 8 oz cream cheese softened
  • 1/2 cup buffalo sauce adjust to taste
  • 1/2 cup ranch dressing or blue cheese dressing
  • 1 cup shredded cheddar cheese divided
  • 1/2 cup shredded mozzarella cheese
  • Optional: chopped green onions crumbled blue cheese, extra hot sauce
  • Substitutions: Neufchâtel cottage cheese + Greek yogurt, or blue cheese dressing

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish.
  2. In a large bowl, combine chicken, softened cream cheese, buffalo sauce, ranch dressing, 1/2 cup cheddar, and mozzarella until smooth.
  3. Spread mixture evenly in baking dish and top with remaining 1/2 cup cheddar.
  4. Bake 20–25 minutes until hot, bubbly, and golden brown on top. Watch for bubbling edges.
  5. Cool 2–3 minutes, then garnish with green onions or blue cheese. Serve hot with chips, crackers, or veggies.

Notes
