Ingredients
  

  • 12 cherry tomatoes firm, ripe
  • 12 fresh basil leaves or baby spinach substitute
  • 12 small mozzarella balls bocconcini or mozzarella pearls
  • 3 tablespoons balsamic glaze
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 12 toothpicks or skewers

Method
 

  1. Wash and dry cherry tomatoes thoroughly.
  2. Drain mozzarella balls and pat dry. Halve if using larger mozzarella.
  3. Thread each skewer: tomato, basil leaf, then mozzarella ball.
  4. Arrange assembled bites on a platter.
  5. Drizzle with olive oil and balsamic glaze.
  6. Season lightly with salt and black pepper.
  7. Serve immediately for best flavor and freshness.
