Ingredients
  

  • 12 oz. plain nonfat Greek yogurt
  • 4 oz. blended cottage cheese
  • 2 cups shredded cheddar cheese sharp, aged preferred
  • 10 oz. mild Rotel diced tomatoes and green chilies, drained
  • 1 tbsp taco seasoning
  • 1 tbsp ranch seasoning
  • Optional Cashew yogurt or coconut yogurt for dairy-free
  • Optional Nutritional yeast instead of cheddar for vegan
  • Optional Sugar-free seasoning packets for lower sodium

Method
 

  1. Allow Greek yogurt and cottage cheese to reach room temperature for smoother blending.
  2. In a large mixing bowl, combine Greek yogurt and blended cottage cheese into a uniform base.
  3. Fold in shredded cheddar cheese gently until evenly distributed.
  4. Drain Rotel thoroughly and add it to the mixture along with taco seasoning and ranch seasoning.
  5. Mix thoroughly until smooth, adjusting seasonings to taste.
  6. Transfer to serving bowl and let rest for 5 minutes before serving for best flavor.

Notes

For lower sodium, use fresh tomatoes and homemade seasonings. For dairy-free, substitute Greek yogurt with cashew yogurt and cheddar with nutritional yeast. For reduced fat, use part-skim mozzarella instead of full-fat cheddar.
