1 lb mixed seafood (shrimp, squid, mussels, scallops)

Prepare the Seafood: Clean and chop your seafood as necessary. Peel and devein shrimp, scrub mussels and clams, and slice squid into rings if using.

Sauté Aromatics: Heat olive oil in a large skillet or pan over medium heat. Add the chopped onion and minced garlic. Sauté for 2-3 minutes until fragrant.

Add Vegetables and Spices: Add the diced bell pepper and chopped tomatoes to the pan. Stir in paprika, saffron (if using), and a bay leaf. Season with salt and pepper, and cook for another 5 minutes.

Toast the Rice: Add the rice to the pan and stir it in with the vegetables and spices. Allow the rice to toast for about 2 minutes, which enhances the flavor.

Add Broth and Simmer: Pour in the seafood broth and bring it to a simmer. Cover the pan and let the rice cook for about 15-20 minutes, or until all the liquid is absorbed and the rice is tender.
