Instructions

  • Cook the Chicken:
    Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper. Cook for 5–7 minutes per side, until golden and cooked through (165°F internal temp). Remove and let rest.

  • Cook the Pasta:
    While the chicken cooks, boil salted water and cook pasta until al dente. Reserve ½ cup of pasta water before draining.

  • Make the Sauce:
    In the same skillet, add butter and garlic. Sauté for 1–2 minutes until fragrant. Pour in chicken broth, scraping up bits. Stir in heavy cream and simmer 3–4 minutes.

  • Add Tomatoes & Cheese:
    Mix in sun-dried tomatoes, red pepper flakes (optional), and Parmesan cheese. Stir until cheese is melted and sauce is creamy. Adjust thickness with pasta water if needed.

 

  • Combine & Serve:
    Slice chicken. Add cooked pasta to the sauce and toss to coat. Add sliced chicken on top. Garnish with basil and extra Parmesan. Serve hot and enjoy!
