Ingredients

2 tbsp olive oil

1 cup diced onion

1 cup chopped carrots

1 cup chopped celery

4 cloves garlic, minced

1 cup dried lentils (green or red)

1 can (14.5 oz) diced tomatoes, fire-roasted preferred

2 bay leaves

1 tsp cumin

1/2 tsp dried thyme

1/4 tsp red pepper flakes (optional)

6 cups vegetable broth

2 cups chopped kale or spinach

1 tbsp lemon juice

Salt and black pepper, to taste
Instructions

Sauté Aromatics – Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté for 5 minutes until onions are translucent.

Add Garlic & Spices – Stir in minced garlic, cumin, thyme, and red pepper flakes. Cook for 1 minute, stirring frequently.

Simmer the Soup – Add lentils, diced tomatoes, bay leaves, and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes or until lentils are tender.

Blend (Optional) – For a creamier texture, blend a portion of the soup using an immersion blender or remove 2 cups, blend, and return to the pot.

Add Greens & Finish – Stir in chopped kale or spinach and cook for 2-3 minutes until wilted. Remove bay leaves and add lemon juice. Season with salt and black pepper to taste.

Serve & Enjoy – Ladle into bowls and garnish with fresh parsley, a drizzle of olive oil, or a sprinkle of Parmesan cheese if desired.
