Ingredients

Scale
  • 2 tbsp olive oil

  • 1 cup diced onion

  • 1 cup chopped carrots

  • 1 cup chopped celery

  • 4 cloves garlic, minced

  • 1 cup dried lentils (green or red)

  • 1 can (14.5 oz) diced tomatoes, fire-roasted preferred

  • 2 bay leaves

  • 1 tsp cumin

  • 1/2 tsp dried thyme

  • 1/4 tsp red pepper flakes (optional)

  • 6 cups vegetable broth

  • 2 cups chopped kale or spinach

  • 1 tbsp lemon juice

  • Salt and black pepper, to taste

Instructions

  1. Sauté Aromatics – Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté for 5 minutes until onions are translucent.

  2. Add Garlic & Spices – Stir in minced garlic, cumin, thyme, and red pepper flakes. Cook for 1 minute, stirring frequently.

  3. Simmer the Soup – Add lentils, diced tomatoes, bay leaves, and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes or until lentils are tender.

  4. Blend (Optional) – For a creamier texture, blend a portion of the soup using an immersion blender or remove 2 cups, blend, and return to the pot.

  5. Add Greens & Finish – Stir in chopped kale or spinach and cook for 2-3 minutes until wilted. Remove bay leaves and add lemon juice. Season with salt and black pepper to taste.

  6. Serve & Enjoy – Ladle into bowls and garnish with fresh parsley, a drizzle of olive oil, or a sprinkle of Parmesan cheese if desired.

Notes

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.

  • Reheating: Add a splash of broth or water when reheating to maintain consistency.

  • Variations: Substitute kale with spinach or Swiss chard, add chickpeas for extra protein, or stir in coconut milk for a creamy texture.

  • Serving Suggestions: Serve with crusty bread, a side salad, or a dollop of yogurt for added richness.
