Ingredients

Scale
  • 1 lb shrimp, peeled and deveined

  • 2 tbsp olive oil

  • 2 tbsp lime juice

  • 1 tsp smoked paprika

  • 1 tsp cumin

  • 1/2 tsp chili powder

  • 1/2 tsp garlic powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 pinch cayenne pepper (optional, for heat)

  • 1 cup cooked rice (or quinoa)

  • 1/2 cup cherry tomatoes, diced

  • 1/4 cup red onion, thinly sliced

  • 1/2 avocado, sliced

  • 1/4 cup roasted corn

  • 1/4 cup fresh cilantro, chopped

  • Lime wedges, for serving

Instructions

  1. Prepare the marinade: In a bowl, whisk together olive oil, lime juice, smoked paprika, cumin, chili powder, garlic powder, salt, black pepper, and cayenne (if using).

  2. Marinate the shrimp: Add the shrimp to the marinade and toss to coat evenly. Let sit for 10-15 minutes.

  3. Cook the shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes per side, or until opaque and slightly curled. Remove from heat.

  4. Assemble the bowl: Divide the cooked rice into serving bowls. Top with cooked shrimp, cherry tomatoes, red onion, avocado slices, and roasted corn.

  5. Garnish and serve: Sprinkle with fresh cilantro, squeeze lime juice over the top, and enjoy!

Notes

  • Substitute shrimp with chicken, salmon, or tofu for variety.

  • Use brown rice, cauliflower rice, or a salad base for dietary preferences.
