Transform your end-of-season green tomatoes into a zesty, crunchy relish that brings bold, tangy flavor to burgers, sandwiches, cheese boards, and more. This vibrant condiment is nutrient-dense and perfect for preserving summer’s harvest.

  • 3.4 lb green tomatoes (1542g), chopped
  • 5 small yellow onions (515g), quartered
  • 1 large red bell pepper (155g), quartered and cleaned
  • 3.5 tsp pickling salt
  • 1.75 cups white sugar (365g)
  • 7 tsp plain flour (27g)
  • 1.25 tsp mustard powder
  • 1/2 tsp turmeric
  • 1/2 tsp celery seed (optional)
  • 3.5 tsp Dijon mustard
  • 1.75 cups apple cider vinegar (370g)
  • 1/2 cup reserved tomato juice (120g)
  • Pinch of red pepper flakes (optional)


Instructions

  1. Chop green tomatoes into 1/4-inch pieces and sprinkle with pickling salt. Let drain in colander for 30 minutes.
  2. Quarter onions and bell pepper into pieces similar in size to the tomatoes.
  3. Whisk together flour, mustard powder, turmeric, and celery seed in a small bowl.
  4. Press salted tomatoes to extract juice and reserve 1/2 cup. Rinse and pat dry.
  5. In a large pot, combine vinegar, reserved tomato juice, and Dijon mustard. Simmer gently.
  6. Whisk in the spice mixture slowly, then stir in sugar until dissolved.
  7. Add tomatoes, onions, and bell pepper. Bring to a boil, then simmer 20–25 minutes until tender-crisp.
  8. Adjust seasoning if needed. If too thick, add vinegar. If too thin, simmer a bit longer.

Notes

Ensure jars are properly sterilized before canning. Let relish cool completely before refrigerating if not sealing. Always use clean utensils when serving to maintain freshness.
