Why Are Zebra Cakes So Good?

  • Total Time: 40 minutes
  • Yield: 8-10 cakes 1x

Description

Zebra Cakes are a beloved snack known for their fluffy yellow cake, creamy filling, and signature white chocolate coating with chocolate stripes. This homemade version brings the same nostalgic flavor with fresh, high-quality ingredients.

Ingredients

Scale

For the Cake:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 eggs
  • ½ cup milk
  • 1 tsp vanilla extract
  • 1 ½ tsp baking powder
  • ¼ tsp salt

For the Creamy Filling:

  • ½ cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream

For the Coating & Stripes:

  • 8 oz white chocolate, melted
  • 4 oz semi-sweet chocolate, melted (for stripes)

Instructions

  • Prepare the Cake:

    • Preheat oven to 350°F (175°C). Grease a 9×13-inch pan.
    • In a bowl, cream butter and sugar until fluffy. Add eggs and vanilla, mixing well.
    • Sift in flour, baking powder, and salt. Gradually add milk and mix until smooth.
    • Pour batter into the pan and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
    • Let cool completely before cutting into small rectangles or circles.
  • Make the Filling:

    • Beat butter, powdered sugar, vanilla, and heavy cream until light and fluffy.
    • Spread a thin layer onto half of the cake pieces and sandwich with another piece.
  • Coat with White Chocolate:

    • Dip each sandwich in melted white chocolate, covering completely.
    • Place on a wire rack and allow excess chocolate to drip off.
  • Add Zebra Stripes:

    • Drizzle melted semi-sweet chocolate over the top in a zigzag pattern.
    • Let the chocolate set before serving.

Notes

  • For a fluffier filling, use marshmallow fluff instead of buttercream.
  • Chill cakes before dipping in chocolate for better coating.
  • Store in an airtight container for up to 3 days.
