  • ½ tsp salt
  • 1 tsp vanilla extract
  • 1 tsp ground nutmeg (optional)

For Frying & Coating:

  • Neutral oil (such as canola or vegetable), for frying
  • ½ cup (100g) granulated sugar, for coating
  • 1 tsp cinnamon (optional)

Instructions

  • Make the Dough:

    • In a mixing bowl, combine warm milk, sourdough starter, sugar, eggs, butter, vanilla, salt, and nutmeg (if using).
    • Gradually add flour and knead for about 8-10 minutes until smooth and elastic. The dough should be slightly sticky but manageable.
    • Cover and let it rise at room temperature for 8-12 hours (overnight) until doubled.
  • Shape the Donuts:

    • Turn the dough onto a floured surface and roll it to about ½-inch thickness.
    • Cut out donuts using a donut cutter or a round cookie cutter (with a smaller cutter for the holes).
    • Transfer to a parchment-lined tray and cover. Let rise for 1-2 hours until puffy.
  • Fry the Donuts:

    • Heat oil in a heavy-bottomed pot to 350°F (175°C).
    • Fry donuts in batches for 1-2 minutes per side, until golden brown.
    • Remove and drain on a wire rack.
  • Coat the Donuts:
