- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/4 cup pumpkin puree
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- Cream Cheese Frosting:
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 1–2 tbsp milk
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream butter, granulated sugar, and brown sugar until light and fluffy (3–4 minutes).
- Beat in pumpkin puree, egg, and vanilla until smooth and evenly colored.
- In another bowl, whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
- Gradually add dry ingredients to wet mixture, mixing until just combined.
- Scoop rounded tablespoons of dough onto prepared baking sheet, spacing 2 inches apart.
- Bake 10–12 minutes, until edges are lightly golden and centers appear slightly soft. Cool on pan 5 minutes, then transfer to wire rack.
- For frosting: beat cream cheese and butter until smooth. Add powdered sugar gradually, then vanilla and milk to desired consistency.
- Once cookies are completely cool, frost with cream cheese frosting and enjoy.
Notes
Stick to 1/4 cup pumpkin puree to prevent overly wet dough. Do not overmix after adding flour to keep cookies soft. Allow cookies to cool fully before frosting to avoid melting the cream cheese topping.
