- 1 clove garlic, peeled and smashed
- ¾ cup sour cream (or Greek yogurt)
- ¼ cup mayonnaise (or avocado mayo)
- 1–2 tsp water
- ½ tsp kosher salt
- ¼ tsp black pepper
- 1 tsp lemon juice
- 1 package (13 oz) thin-crust pizza dough
- 2–3 dill pickles, thinly sliced
- 1 cup shredded mozzarella cheese
- ¼ cup parmesan cheese
Instructions
- Preheat oven to 400°F. If using a pizza stone, place it inside. Line a baking sheet with parchment if preferred.
- In a bowl, mix garlic, sour cream, mayo, water, salt, pepper, and lemon juice until smooth. Adjust water for spreadable consistency.
- Roll out dough into a 12-inch circle. Transfer to the prepared baking sheet or pizza stone. Optional: brush edges with olive oil.
- Spread garlic sauce evenly on the dough, leaving a ½-inch border.
- Pat pickle slices dry and layer over the sauce. Sprinkle mozzarella over pickles, then top with parmesan.
- Bake 16–20 minutes until cheese is melted and crust is golden. Broil for 2–3 minutes at the end if desired.
- Let rest for 3 minutes before slicing into 8 pieces. Serve warm.
Notes
Pat pickles dry to avoid sogginess. Don’t oversauce. Layer in order: sauce, pickles, mozzarella, then parmesan. Preheating is essential for crust crispiness. Resting the pizza before cutting ensures toppings stay intact.
