- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups diced apples (firm varieties like Granny Smith or Honeycrisp)
- 1 cup caramel bits
- 2 tablespoons heavy cream
- Pinch of salt
Instructions
- In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
- Using a stand mixer or hand mixer, beat the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3–4 minutes).
- Beat in the eggs, one at a time, followed by the vanilla extract. Scrape down the sides of the bowl.
- Gently fold in the diced apples using a spatula. Avoid over-mixing.
- Cover the dough and refrigerate for at least 2 hours.
- Preheat oven to 350°F (175°C). Drop rounded tablespoons of dough onto parchment-lined baking sheets. Bake for 12–14 minutes.
- While cookies cool, melt caramel bits with heavy cream and a pinch of salt in a microwave-safe bowl (30-second bursts, stirring in between) until smooth.
- Drizzle the warm caramel over cooled cookies. Optionally, sprinkle a pinch of flaky sea salt on top.
Notes
Use firm apples to avoid mushy texture. Chill the dough for at least 2 hours for optimal chewiness. Add 1/2 cup rolled oats for extra heartiness.
