Description

  • 1 medium yellow onion, finely chopped
  • 4 tablespoons butter, divided
  • 2 large eggs
  • 1 to cups shredded sharp cheddar cheese
  • 1 cup whole or 2% milk
  • 1/4 cup mayonnaise (optional)
  • 1/4 cup sour cream (optional)
  • 1 sleeve Ritz crackers, crushed
  • Salt and black pepper, to taste
  • Garlic (fresh or powder), to taste
  • Optional: fresh herbs like thyme or parsley

Instructions

  1. Melt 2 tablespoons of butter in a large skillet over medium heat. Add sliced squash and chopped onion, season with salt and pepper, and sauté for 8-10 minutes until tender.
  2. In a large bowl, whisk together eggs, milk, mayonnaise, sour cream, and seasonings. Stir in shredded cheese and the sautéed vegetables.
  3. Grease a 9×13-inch casserole dish. Pour in the squash mixture and smooth the top.
  4. Mix crushed Ritz crackers with 2 tablespoons melted butter and sprinkle over the top.
  5. Bake at 350°F (175°C) for 30-45 minutes until bubbly and golden. Broil for 2-3 minutes at the end for extra crispiness, if desired.
