- ¼ cup unsweetened almond milk or any milk (or ⅓ cup heavy cream for richer texture)
- 2 garlic cloves, minced
- ¼ teaspoon sea salt, plus more for seasoning
- Freshly ground black pepper, to taste
- 1 cup fresh spinach or baby spinach leaves (optional)
- 1 cup chopped vegetables (e.g., broccoli, bell peppers, mushrooms, asparagus)
- ½ cup shredded mozzarella or crumbled feta cheese (or a mix)
- 1 tablespoon extra-virgin olive oil or unsalted butter
- Optional: fresh herbs like parsley, chives, or tarragon for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Whisk the eggs with milk (or cream), salt, and pepper in a bowl until smooth and slightly frothy.
- Heat olive oil or butter in your skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant.
- Add chopped vegetables and cook for 5-7 minutes until they soften and some moisture evaporates. Season with salt and pepper.
- Pour the egg mixture evenly over the cooked vegetables in the skillet. Let it cook undisturbed for about 3-5 minutes until the edges start to set but the center is still jiggly.
- Sprinkle cheese evenly on top.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the frittata is puffed, golden on top, and the center is set (not wobbly).
- Remove from oven and let cool for 5-10 minutes before slicing. Garnish with fresh herbs if desired.
Notes
For best results, avoid stirring the egg mixture once it’s in the skillet. Let it cook undisturbed to form a nice crust. Allow the frittata to rest before slicing for easier serving.
