Ingredients

  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon freshly crushed black pepper, finely ground
  • 1 large garlic clove, minced
  • 1/4 cup balsamic vinegar
  • 3/4 cup extra virgin olive oil

Instructions

  1. Clear a clean, flat surface and gather all ingredients. Choose a bowl with high sides to prevent splashing during whisking.
  2. In a small mixing bowl, whisk together the honey, balsamic vinegar, Dijon mustard, salt, pepper, and minced garlic. Whisk vigorously for 30-45 seconds until uniform and slightly frothy.
  3. Slowly drizzle in the extra virgin olive oil while whisking continuously. The mixture should thicken and become creamy.
  4. Continue whisking for 1-2 more minutes until fully emulsified and glossy. Add a teaspoon of water if too thick.
  5. Taste and adjust seasoning as needed with more honey, vinegar, or salt.
