- 1 tablespoon olive oil
- 1 large yellow onion, chopped
- 3 jalapeños, chopped
- 5 garlic cloves, minced
- 2.5 pounds ground beef (85% lean recommended)
- 1½ teaspoons salt
- 1 teaspoon black pepper, freshly ground
- 4 tablespoons chili powder
- 1 tablespoon oregano, dried
- 3 tablespoons ground cumin
- 1 teaspoon ground coriander
- 3 ounces tomato paste
- 28 ounces diced tomatoes
- 2 cups beef stock
Instructions
- Heat olive oil in a large Dutch oven over medium heat. Add onions and jalapeños. Cook 6–8 minutes until onions are translucent.
- Add garlic and stir for 1 minute until fragrant.
- Increase heat to medium-high. Add ground beef, salt, and pepper. Brown meat for about 8 minutes, leaving some larger chunks for texture.
- Reduce heat to medium. Add chili powder, cumin, oregano, and coriander. Stir and bloom spices for 1 minute.
- Add tomato paste and cook for 2 minutes until slightly darkened. Stir in diced tomatoes and beef stock.
- Bring to a simmer. Reduce heat to medium-low and cook uncovered 30–60 minutes, stirring occasionally, until thickened to desired consistency.
Notes
Taste and adjust seasoning after 30 minutes of simmering. For richer flavor, prepare 24 hours ahead. Store leftovers separately and reheat gently.
