Instructions

  1. Heat olive oil in a large Dutch oven over medium heat. Add onions and jalapeños. Cook 6–8 minutes until onions are translucent.
  2. Add garlic and stir for 1 minute until fragrant.
  3. Increase heat to medium-high. Add ground beef, salt, and pepper. Brown meat for about 8 minutes, leaving some larger chunks for texture.
  4. Reduce heat to medium. Add chili powder, cumin, oregano, and coriander. Stir and bloom spices for 1 minute.
  5. Add tomato paste and cook for 2 minutes until slightly darkened. Stir in diced tomatoes and beef stock.
