- 1 lb ground beef (80/20 or 85/15)
- 1 packet taco seasoning
- 1 packet ranch seasoning
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can pinto beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (15 oz) can diced tomatoes
- 4 cups beef or chicken broth
- Shredded cheddar cheese (garnish)
- Sour cream (garnish)
- Tortilla chips (garnish)
Instructions
- Heat large pot over medium-high heat. Cook ground beef until half done, add onion, cook 4 minutes, then add garlic for 30 seconds. Drain excess fat if needed.
- Add drained beans, corn, undrained tomatoes, and broth. Stir well.
- Stir in ranch seasoning and taco seasoning packets. Add water if needed.
- Simmer 15 minutes, stirring occasionally, until flavors meld together.
- Serve hot with shredded cheddar, sour cream, and tortilla chips.
Notes
Use a 6-quart pot to avoid overflow. Drain beef fat to prevent greasy texture. Do not substitute liquid ranch dressing for the dry mix.
