  • For the Cheesecake Filling:
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 cup whipped topping
  • ½ tsp vanilla extract
  • 1 cup chopped fresh strawberries
  • For the Strawberry Shortcake Crumble:
  • 10 golden Oreos, crushed
  • 1 tbsp strawberry gelatin powder
  • 1 tbsp melted butter
  • Optional Toppings:
  • Whipped cream rosettes
  • Fresh strawberry halves
  • White chocolate drizzle

Instructions

  1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
  2. Beat eggs 3–4 minutes until thick and pale. Add sugar and vanilla; beat until ribbons form.
  3. Fold in flour, baking powder, and salt gently. Spread batter evenly in pan.
  4. Bake 10–12 minutes, until golden and springy.
  5. Turn cake onto a powdered sugar–dusted towel, peel parchment, and roll up with the towel. Cool completely.
  6. Beat cream cheese and powdered sugar until smooth. Fold in whipped topping, vanilla, and chopped strawberries.
  7. Unroll cake, spread filling evenly, then re-roll without towel. Place seam-side down.
  8. Mix crushed Oreos, strawberry gelatin powder, and butter to create crumble.
  9. Spread light whipped topping over cake, press crumble onto surface. Chill 30–60 minutes before slicing.
