These Strawberry Lemon Blondies are a refreshing twist on your typical spring desserts. With the perfect balance of sweet strawberries and tangy lemon, they’re ideal for warm weather gatherings or a sunny afternoon snack. Easy to make and full of fresh flavors, this dessert will become your new go-to for springtime indulgence!

Ingredients

  • 1 1/2 cups all-purpose flour

  • 1 cup granulated sugar

  • 1/2 cup unsalted butter, melted

  • 2 large eggs

  • 1/2 teaspoon vanilla extract

  • 1 tablespoon lemon zest

  • 1/4 cup fresh lemon juice

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 cup fresh strawberries, diced

  • Optional: 1/4 cup white chocolate chips

Instructions

  1. Preheat the Oven:
Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper or lightly grease it.

  2. Mix Wet Ingredients:
In a large mixing bowl, whisk together melted butter, sugar, and eggs until smooth. Stir in vanilla extract, lemon juice, and lemon zest until combined.

  3. Combine Dry Ingredients:
In a separate bowl, sift together flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until combined.

  4. Fold in Strawberries:
Gently fold in the diced strawberries and, if desired, white chocolate chips. Be careful not to crush the strawberries.

  5. Bake:
Pour the batter into the prepared baking pan and spread it out evenly. Bake for 30-35 minutes or until golden brown on top and a toothpick inserted into the center comes out clean.

  6. Cool and Serve:
Let the blondies cool for at least 10 minutes before transferring them to a wire rack. Once cooled, cut into squares and serve.

Notes

  • For a gluten-free version, use a 1:1 gluten-free flour blend.

  • If you’re looking to cut down on sugar, consider substituting coconut sugar or honey.
