- 1 can (10.5 oz) cream of mushroom or chicken soup
- 1 cup mayonnaise
- 1 large egg
- 8 oz sharp cheddar cheese, shredded
- 1 teaspoon salt
- 1/2 teaspoon fresh ground black pepper
- 2 sleeves Ritz crackers, crushed
- 1 stick (1/2 cup) butter, melted
Instructions
- Preheat oven to 350°F and grease a 9×13-inch casserole dish.
- Wash and slice or dice squash. Pat dry with paper towels to remove moisture.
- In a large bowl, whisk together soup, mayonnaise, egg, cheese, onions (if using), salt, and pepper until smooth.
- Fold in the squash until well-coated. Adjust seasoning as needed.
- Pour mixture into prepared dish, spreading evenly.
- Mix crushed Ritz crackers with melted butter until combined.
- Sprinkle cracker mixture evenly over casserole.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake an additional 20 minutes until bubbly and golden.
