  • 8 oz sharp cheddar cheese, shredded
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 2 sleeves Ritz crackers, crushed
  • 1 stick (1/2 cup) butter, melted

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch casserole dish.
  2. Wash and slice or dice squash. Pat dry with paper towels to remove moisture.
  3. In a large bowl, whisk together soup, mayonnaise, egg, cheese, onions (if using), salt, and pepper until smooth.
  4. Fold in the squash until well-coated. Adjust seasoning as needed.
  5. Pour mixture into prepared dish, spreading evenly.
  6. Mix crushed Ritz crackers with melted butter until combined.
  7. Sprinkle cracker mixture evenly over casserole.
