Instructions
Mix the Dough:
In a large mixing bowl, combine the active sourdough starter, warm milk or water, and honey (if using). Stir to dissolve.
Gradually add the bread flour and salt. Mix until a shaggy dough forms.
Cover and let rest for 30 minutes.
Bulk Fermentation (Overnight Rise):
Stretch and fold the dough every 30 minutes for the first 2 hours.
Cover and let the dough rise at room temperature (70°F/21°C) for 8-10 hours or overnight until doubled in size.
Shape the Muffins:
Lightly flour a work surface and roll the dough to 1/2-inch thickness.
Use a 3.5-inch round cutter to cut out muffins.
Place on a parchment-lined tray, dusted with cornmeal. Cover and proof for 1-2 hours until puffy.
Cook the Muffins:
Preheat a griddle or cast-iron skillet over medium-low heat (325°F/163°C).
Place muffins on the griddle, cooking for 5-6 minutes per side until golden brown.
Internal temperature should reach 190°F (88°C).
