  • Total Time: 47 minutes
  • Yield: 24 cookie cups 1x

Description

These Sugar Cookie Cups are adorable bite-sized treats combining classic sugar cookie flavor with customizable cups perfect for filling with frosting, fruit, curd, or chocolate.

Ingredients

Scale
  • 3/4 cup salted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Colorful sprinkles
  • 2 ounces cream cheese, softened
  • 3 cups powdered sugar
  • 1/4 cup butter
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • Pink or red food coloring gel (optional)

Instructions

  1. Preheat oven to 350°F and grease two muffin pans generously with nonstick spray.
  2. Cream softened butter and sugar together for 3–5 minutes until light and fluffy.
  3. Beat in the egg, vanilla extract, and almond extract until smooth.
  4. Whisk flour, baking powder, and baking soda in a separate bowl, then add to wet mixture and mix just until dough forms.
  5. Press 2 tablespoons of dough into each muffin cup and shape up the sides to form cups.
  6. Bake for 12 minutes until edges are lightly golden.
  7. Cool 15 minutes, then press centers down with a spoon to refine cup shape; cool completely.
  8. Beat cream cheese and butter until smooth; add powdered sugar, vanilla, and milk to make frosting. Add food coloring if desired.
  9. Pipe or spoon frosting into cooled cookie cups and top with sprinkles.

Notes

Avoid overmixing the dough to maintain tender cups, and use light-colored muffin pans for even baking without over-browning.
